Strawberry & Yoghurt Ice Blocks with popping Candy Sherbet

The days are definitely getting warmer. The scent of spring is in the air and people are slowly crawling out of hibernation and hitting the sunny spots around town. I love spring –  the warm days and cool nights, and the moment the weather warmed I found myself craving salads and fruit. With the abundance of strawberries, what better time to create some healthy treats from the warming months. These ice blocks are very, VERY easy to make and super healthy too. Adding the sherbet is absolutely optional, if you’re on a health kick feel free to leave it out.

Serves 6
Freezing time: 3-4 hours
Prep time: 15 minutes

INGREDIENTS

Iceblocks
2 cups strawberries, hulled (about 2 punnets)
1 ½ tablespoons honey
1 ½ tablespoons 
lemon juice
½ cup natural or Greek yoghurt

Popping Candy Sherbet
6 tablespoons icing sugar
2 tablespoons citric acid
2 tablespoons popping candy (optional)

METHOD

1 Roughly chop the strawberries and place in the blender with 1 tablespoon of honey and 1 tablespoon of lemon juice. Blend until smooth. Pour the mixture into an iceblock mould and fill to around 2/3 full.

2 Place the mould in the freezer for around 30 minutes. This allows the mixture to set slightly. Meanwhile, combine the yoghurt with the remaining honey and lemon.

3 Top the moulds with the yoghurt and place a popstick in the center of each iceblocks, freeze for at least 3 hours or until completely frozen.

4 To make the sherbet, place all the ingredients in a bowl and mix. Just pour the sherbet into a small bowl and let everybody dip the ice blocks as they like.

NOTES

Mix things up! Blend any fruit you like, add extra yoghurt or indeed have none. Try adding a bit of mint, pieces of fruit or flavoured syrups. Go nuts and get creative.
