Quick Chocolate truffles
CHOC + CHILLI + COCONUT BALLS
3/4 cups coconut flakes or chips
1/4 cup icing sugar
1/2 tbsp heavy cream
1⁄4 tsp. vanilla extract
1/2 tsp. cocoa
Ground chilli to taste OR 1 tsp ground cinnamon (if avoiding heat)
Extra coconut flakes for coating balls
Place coconut flakes in a food processor and pulse until finely chopped. Transfer coconut to a bowl, add 1⁄4 cup of icing sugar, chilli or cinnamon, cocoa, heavy cream, vanilla, and mix well.
Spoon out about 1 tbsp. coconut mixture and roll it into a 1'' ball. Repeat process with remaining mixture and set "potatoes" aside to rest for 1 hour.
Dredge each ball in the extra coconut flakes, shaking to remove excess.
Cover with plastic wrap and store in refrigerator.
Choc + Peanut Balls
1/4 cup chunky peanut butter
2-3 tbsp. honey
1/3 cup dried milk
1/3 cup instant oats
1-2 tbs grated dark chocolate
3 tbs cocoa for coating balls
Mix all the ingredients together adding honey to taste.
Form into balls using a tablespoon measure. Refrigerate until firm.
Roll balls in cocoa. Enjoy!
